Introduction

Tequila is a small town in Jalisco named for the spirit it gave the world, surrounded by fields of blue agave on volcanic soil. In 2006 the 'Agave Landscape and Ancient Industrial Facilities of Tequila' became a UNESCO World Heritage Site, recognising centuries of cultivation, roasting and distilling. Visitors enter centuries-old distilleries (e.g. La Rojeña) to follow the journey from agave heart to amber liquor, climb lookouts over sword-like fields, and taste an authentic blanco or añejo in town.
